DSC_0880.JPGHoly cow! We expected the house to be beautiful — but we had no idea. Truly amazing. We walked around speechless for the first few hours. Augustina and Poli have been so kind and helpful and wonderful. The surf looks picture-perfect — and big!  We’ve been enjoying the pool and will probably hit the beach later today or tomorrow. Will send you a report. Poolside room is perfect. AC was a nice option last night. Master bedroom is so stunning; we’ll have to check that out on our next trip!

Chicken Under a Brick (or Rock)
1. Place butterflied chicken, skin side down, on the grill grate over a medium-low fire or medium gas heat. Weigh down chicken with a foil-wrapped brick, cast-iron skillet, or stone so the meat is splayed evenly against the grill.

2. After about 15 minutes, when the skin is golden and beginning to crisp, turn the chicken and cook it on the bone side. Ditch the brick.

3. Let meat rest for at least 10 minutes before serving.

We all agreed that the pictures on your website are good but they don’t do your house justice.  Al and I had the master bedroom and I loved the outdoor shower. The pool was wonderful, (much larger than we expected) and the lounging areas were great for sun worshippers and those wanting to read in the shade.  You were right…..it didn’t feel like there were 12 people there.  The food was fabulous….I’m so glad you suggested Augustina cook for us.  The first night Paulie made Dorado fish over a campfire.  Augustina made shrimp for our tacos, etc. and it all tasted wonderful.  Breakfast was my favorite.  The fresh fruit and yogurt along with eggs or pancakes and whatever she made that day was outstanding. We all had such a wonderful time and were very happy with Paulie and Augustina’s attention to detail.   On the last day Augustina showed us how to make her fabulous guacamole.  As we said our good-byes, Rigo said his mom was sad that we were leaving.  I think she enjoyed having us there just as much as we enjoyed being there.
